The Folie à Deux 2007 Merlot will tease your nose with blueberry and blackberry, with underlying hints of vanilla and a touch of cocoa. Berry cobbler flavors with touches of nutmeg will please your palate.
The Merlot for our 2007 vintage is a blend of vineyards from St.Helena, Rutherford, and South Napa. Each source varies in temperature, showcasing the differences in the Napa Valley mesoclimates. Low yielding vines in the cooler regions of the Napa
Valley helped produce small berries with impressive intensity while the warmer climate fruit is riper, with voluptuous texture, adding richness to the wine.
After a cold pre-soak, the grapes were fermented using the rack –and return method (délestage) favored by leading Bordeaux chateaux. In addition to increasing color and flavor, this process allows for the removal of seeds, which reduces astringency and produces more supple tannins. The wine was then aged for 10 months in a combination of American (49%), French (46%) and Hungarian (5%) oak to help soften the tannins and integrate all of the flavors and textures.
