This is pure, unadulterated Sauvignon Blanc. The nose is a mélange of orange blossom, lemongrass, kumquat with a hint of jalapeno pepper. The palate is firm, but surprisingly rich and long. While it’s absolutely delicious now, this 2007’s brisk acidity and dramatic fruit should allow it to age gracefully over the next few years.
Most of the grapes for our 2007 Sauvignon Blanc came are grown in Northern areas of the Napa Valley, including our 22-acre vineyard just north of Calistoga. The warm days and cool nights create a white wine with expressive fruit and snappy acidity. Sustainable farming techniques plus naturally occurring low yields translate to consistent quality year in and year out.
To preserve the vibrancy and ideal Sauvignon Blanc character, we fermented 100% of the grapes in stainless steel tanks. The wine was then aged in these tanks for an additional nine months to round out the racy acidity and the vibrant fruit characteristics.
This wine is the perfect marriage to our chef’s char-broiled oysters with butter and garlic but is also the perfect complement to most chicken and fish dishes, and of course crusty French bread and goat cheese. Enjoy.
